What is the purpose of the OK key in the joystick's center? Can you customize commands?

Press OK to turn the HUD on/off. Hold OK and rotate the base dial to adjust the HUD size on the base, or hold OK and rotate the joystick's magnetic roller to adjust the HUD size on the joystick.

The OK key does not support custom commands.
